When friends and family gather together, serving seafood is the perfect time to showcase your all-star cooking talents. To help you prepare for your next BIG event, we’ve provided a few recipes that will surely thrill the fans.

Mahi Bites


Mahi Bites
2 lbs. fresh Mahi Filet
2 tbs. parmesan cheese
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. celery salt
1 tsp. paprika
½ tsp. black pepper
1 cup all-purpose flour
1 cup yellow corn meal
1 cup buttermilk
1 cup of coconut oil
1 lemon cut into 1/8’s
kale leaves for garnish

Tartar Sauce
1 cup mayonnaise
¼ cup sour cream
1 tbs. minced shallot
1 tbs. sweet pickled relish
1 tsp. Old Bay seasoning
1 tsp. salt
½ tsp. black pepper
½ tsp. juice from fresh lemon
½ tsp. garlic powder
½ tsp. freshly chopped dill


Mahi Bites
1. Cut mahi into ¾ inch squares. Mix salt, pepper, and garlic powder together in bowl until smooth and well blended season.
2. Heat oil on a large skillet over medium heat.
3. Put flour, corn meal, and buttermilk in separate bowls.
4. Dredge mahi in flour, turning deeply to evenly coat and shake off excess.
5. Dip and coat well in buttermilk.
6. Dredge in corn meal, turning deeply to evenly coast and shake off excess.
7. Place in heated oil.
8. Cook for 1 ½ minutes on top and bottom and then begin to cook each side for 30 seconds. Rotate until both sides have cooked.
9. Remove from pan and let drain and cool on rack or folded paper towel.
10. Cut lemon wedges, place tartar sauce on plate, garnish plate, plate mahi bites, and place lemon wedges evenly along outside of plate.

Tartar Sauce
1. With a whisk, mix all ingredients in a large bowl.
2. Cover and refrigerate until ready to serve.

Shrimp Cocktail


Cocktail Sauce
½ cup ketchup
½ cup chile sauce
4 tsp. horseradish
½ tsp. worcestershire sauce
⅛ tsp. red pepper (Optional)
juice from ½ a lemon

(4) lbs. 16-20 Key West Pink Shrimp
4 tsp. Old Bay seasoning
kale leaves for garnish


Cocktail Sauce
1. Combine all ingredients in a large mixing bowl.
2. Mix well, cover, and refrigerate until ready to serve.
1. Fill large pot with water, add Old Bay, and bring to a boil.
2. Peel and devein shrimp.
3. Boil shrimp 3-4 minutes.
4. Remove from pot and immediately place in bowl with ice and water to stop cooking.
5. Continue in batches until all shrimp are cooked and cooled. Cover and refrigerate.
6. On a large plate, center the cocktail sauce and garnish plate. Place shrimp around plate, layering if necessary. Place lemon wedges around outside of cocktail sauce bowl and serve.

Maple Glazed Scallops Wrapped in Bacon


(2) lbs. U-10 sea scallops
(1) lb. Sliced bacon
½ cup pure maple syrup
dash of pepper to season
kale leaves for garnish


1. Preheat oven to 325 degrees.
2. Cut bacon slices in half.
3. Arrange bacon on flat cooking sheet.
4. Cook bacon 8-10 minutes until fat begins to cook.
5. Remove bacon from oven and set aside to cool.
6. Raise oven temperature to 375 degrees.
7. Rinse scallops and wrap with bacon securing with toothpick.
8. Place wrapped scallops back on cooking sheet.
9. Cook about 15 minutes until bacon is crisp and scallops are cooked.
10. While scallops are cooking, garnish plate.
11. Remove scallops from oven, drizzle maple syrup on scallops with basting brush, sprinkle with dash of pepper, and serve.
